Teatime Treats: Banana Bread

Hooray for Breakfasts: Banana Bread| Vonder

Banana bread is a great breakfast. It is easy to grab when you are on the go, and can be reasonably healthy too. It’s also a great post workout snack, or the perfect thing to take to a picnic. It is also super easy to make at home. No, we promise.

There are so many variations on banana bread. It can get pretty decadent, fast. Adding chocolate chips, for example, is one way to turn your bread into cake with just one additional ingredient. It also works pretty well with nuts, mainly walnuts. There really isn’t any limit to what you could add to your banana bread, some people opt for raisins or other dried fruits as well.

There are also plenty of recipes, from those that are healthier (less sugar), vegan (no eggs) to the classic recipes we all love.

In the spirit of the new year, and all the resolutions we adopted to eat healthier, we are sharing one of our favorite recipes for healthy banana bread. By all means go ahead and add chocolate chips, if that’s what you need, but the following recipe is perfect for great tasting, healthier breakfasts.

One of our favorite healthy banana bread recipes is from Cookie and Kate, one of our favorite food bloggers at the moment.

What do you need?

Whole wheat flour, 1 ¾ cups

(You can use pretty much any flour, but we are going with the healthier option here)

Honey or maple syrup, ½ a cup

(You can use sugar, but we went for a healthier substitute)

Oil, ⅓ cup

(This can be butter, or coconut oil, obviously the more unrefined the healthier)

Ripe bananas, 2 large ones

(The riper the better, and actually banana bread is a great way to use up over ripe bananas)

2 eggs

1 teaspoon baking soda

1 teaspoon vanilla extract

⅓ cup of milk or water

½ teaspoon salt

½ teaspoon cinnamon

(We have made without and it still works well, if you don’t have at home)

Banana bread is a one bowl recipe. This is part of the reason why we love it so much. Less washing up and super quick to make.

What next?

Mash the bananas in a bowl. Combine all the other ingredients together with the banana.

Don’t forget to grease your baking tin, and turn on the oven first.

Pour the mixed ingredients into the baking tin, bake for 20 minutes, checking all the time.

Stick a clean knife into the centre of the baking bread, if it comes out clean, your bread is ready.

Serve warm to really appreciate the flavours of this amazingly dense and delicious bread.
